The Research: "Engineering Rhubarb Cellulose with Antimicrobial Functionalities for Sustainable Packaging Materials" Co-authored with Stephen J. Eichhorn, University of Bristol & Bio2PEs.

The science: Processing cellulose nanofibers (CNF) from rhubarb, chemically grafting antimicrobial polypeptide Nisin onto the fibers to create edible, sustainable food packaging coatings.
